Well, there are pretty many many things one can do. I'll mainly cover the civil arena but also give you an idea what other things you can do as per what I have been doing these days.
Firstly let's cover the civil arena, as a student;
You have ample of time to clear your basics. It's very important to clear your basics in mechanics, engg drawing, Structural analysis and other design subjects if you like the Structural field. If you want to move to Estimation/surveying/geo technical etc field you can cover those subjects respectively.
Don't jump to learn softwares unless you are clear with manual designing basics. Unless you know how a structure behaves, unless you are clear with SFDs, BMDs you wouldn't know how to interpret your results rightly from Design softwares like staad/Etabs. Learn softwares to make your work faster once you know how to work.
You can understand and learn softwares like AutoCAD, for drafting, Etabs/Staad pro for designing, free courses are available on Udemy, YouTube and other platforms. Else you can always download software and explore by yourself. Practice designs with simple examples. Other softwares to be explored are:- Sketch Up:- 3Ds, SAFE:- foundation, SAP, Ansys, Tekla structures, BIM etc
There are many courses launched by professionals to teach students/ freshers designing and make them market ready for job profiles. I came across one on Instagram:- civil.structural . And even our office is trying to explore the digital field and bring in courses for students. Will update you with same when we successfully launch.
Read a lot of civil literature so that you get more clarity over things and know what exactly interests you. This will help you to better choose your projects or specialisation fields.
There are work from home internships offered by many platforms eg:- Internshala. See if you can take up any that interests you as the experience will definitely help you in future.
You can do courses for preparation of various exams on YouTube:- Adda 24x7, Gate academy, upgrade etc.You can find my answer on exam preparation.
Other than these you can explore other fields like data science, courses in python, machine learning etc. There are certificate courses for MBA etc. You can also do language courses if it interests you. You can also explore your hobbies like music, art etc.
